In fish sales you may see references to HOGs and HGs; that is head on and gutted and head off and gutted.
From this point, we have several options. The fish can be sold, with or without heads and fresh or frozen, or they can be moved on to secondary processing.
Fresh fish are packed in ice in insulated boxes. This keeps them in good condition for several days. In most cases, fresh products arrive within three or four days of harvesting.
When products are frozen, they can spend a longer time in transit, for example going from Chile to the United States by boat. We send frozen fish from Chile to both the east and west coasts of the United States.
